La Rioja Tapas Restaurant and Wine Bar is doing something different. We are adding a new touch and taste while keeping with tradition. With the help of our dear friend and Executive Chef, Jose Ignacio Sanchez (Former Chef to the Ambassador of Spain for the UN), we have created a special menu with recipes that stretch from the northern most part of Spain to the very south.

Come and try our fine cuisine and get a feel for Spain. If you don't try you won't know.

La Rioja is a region in Spain famous for its fine wine and delicious cuisine.

Traditional Chorizo.

If you have Spanish cookbooks at home, you may have recipes that call for Spanish chorizo and wonder "where on earth can I find the real and authentic thing"? Look no further! Chorizo is not only one of Despaña`s best-selling products, but it is very important to us because it is how we got our start! Our chorizo is rooted in our humble beginnings: in 1971, Despaña started as a chorizo-making factory, which is still active to this day.

Our cooking chorizo is the perfect component to any recipe calling for sausage. It will liven your dish without masking the flavors of your other ingredients. Our chorizo will make all of the Spanish "classics" - chorizo a la sidra, cocido, and patatas a la Riojana - taste just as good as they do in Spain! It can also be enjoyed by itself simply warmed up and served as a tapas dish.

Mini Traditional Chorizo.
Price per pound: $7.95

The Mini chorizo is a bite-sized "cocktail link" – perfect for canapés! They have a hot, spicy flavor because we use a higher concentration of Pimenton de la Vera picante in our recipe. The Mini chorizos contain all of the same high-quality ingredients that our regular sized chorizos contain. Serve these hot off of the grill and have an ice-cold beer or glass of Godello in-hand and enjoy!

TASTING NOTES: 
All the flavors are concentrated in each juicy little link. The hot smoky paprika wakens your taste buds initially and then slowly softens out.

Hot Traditional Chorizo Picante.

For those who like it hot! This is the hottest of our chorizos because we use a higher concentration of Pimenton de la Vera picante. Spice it up with an ice-cold beer or glass of Godello!

TASTING NOTES: 
Chorizo picante is a little bit drier in texture than our traditional chorizo. The spicy hot smoky flavor is concentrated and lingers in your mouth.

Chistorra/ Thin Spanish Style Sausage.
Price per pound: $7.95

Chistorra is a very typical sausage of Navarra, as well as Basque Country and Aragon. Despaña Brand chistorra is made at our factory with a sheep casing, pork, pimentón, and spices that make it a delicious and spicy addition to a variety of dishes, especially egg and potato dishes, and ideal for chistorra a la sidra (a classic and simple preparation of chistorra and cider). You may notice a difference in the texture (increased smoothness) or a difference in spiciness from the chistorra to the chorizo, because the chistorra is a thinner sausage.

Traditional Morcilla (Black Pudding & Onion Sausage)

Our morcilla is the undiscovered gem among the products we manufacture. It is a hit every time we serve it at tastings (and it always sells out!). Once people try it, they love it! Try it fried in a bit of olive oil or on the grill and serve with a fried egg. It will give your stews a ton of flavor (fabada, anyone?).

This family recipe originated in Asturias. Whether it`s blending spices or the natural Spanish onions that we select and chop by hand, we put a lot of care and time into making our morcilla.

TASTING NOTES: Morcilla is soft in texture with a lot of complex flavors of cinnamon and nutmeg blending together as you taste it. It has a slight sweet finish.

Salchichon.

Our salchichon is a dry cured product that is ready to be sliced and eaten. The primary difference between chorizo and salchichón is that salchichón uses no pimentón de La Vera. Our Despaña Brand dry-cured salchichón does have small peppercorns, which are visible to the eye and give this meat a delightful peppery taste. Our salchichón is very savory and perfect on its own as charcuterie, with a glass of Manzanilla sherry, or as part of a bocadillo or sandwich.

You will taste some savory and garlicky flavors, with a peppery finish.

Cantimpalo Chorizon (Whole Piece).

This dry-cured Cantimpalo-style chorizo is rich with smoky, meaty flavor. Smoked pimenton de La Vera gives this chorizo its intensely smoky flavor. We love Campofrio`s Cantimpalo chorizo served the simplest way: with crusty rustic bread, plenty of Manchego cheese, and a glass of Tempranillo. Because this is the entire piece of Cantimpalo chorizo, you`ll have to slice it yourself (we also offer pre-sliced if that`s what you prefer).

Lomo Embuchado (Pieza Entera)/ Dry Cured Pork Loin (Whole Unit).

Lomo is a dried-cured pork loin and is traditionally served in thin slices. Campofrio lomo embuchado is seasoned with sea salt, pimentón, and garlic and then cured. Compared to many of the meats and embutidos that we carry, this lomo is probably one of the leanest. For this reason, lomo is a great contrast to some of the fattier embutidos that a good charcuterie assortment should have. The light pink color and lightly salted flavor make it easy to enjoy and it pairs nicely with Manchego cheese and a glass of Tempranillo. Because this is the entire piece of lomo embuchado, you`ll have to slice it yourself (we also offer pre-sliced if that`s what you prefer).

Mallorcan "Sobrasada" Semi-Soft Cured Sausage.

Sobrasada, the most typical sausage from Mallorca, is best enjoyed when spread on crusty bread and toasted until it gets slightly melted. Pork, sea salt, paprika, garlic, and olive oil are combined in a recipe that is as close to what you'd find on the Balearic Islands. We love to see the reaction of people who have tried sobrasada for the first time...it`s usually along the lines of "this is amazing!".

Butifarra (Catalonian Style Sausage).

Butifarra is a mild, juicy sausage that is very typical of the Catalonian region of Spain. Seasoned with black pepper and garlic, it has a white-to-pink interior, and is traditionally served grilled. For the ultimate preparation, serve with white beans (at Despana, we have plenty of options for you!) or as part of a stick-to-your-bones cocido.

Mild Dry-Cured Chorizo

This dry-cured chorizo is manufactured in La Rioja, Spain and was the first dry-cured chorizo product to be imported into the US. It is made with sweet Pimenton de la Vera and is ready to be sliced and eaten. This chorizo is all-natural with no artificial preservatives.

TASTING NOTES: You will taste a delicate balance of spices, garlic and smoked paprika. We recommend serving this chorizo with wine and cheese, or with fresh bread. This dry chorizo is also available in a spicier version, Picante, if you prefer spicy flavors.

Hot Dry-Cured Chorizo

This dry-cured chorizo is manufactured in La Rioja, Spain and was the first dry-cured chorizo product to be imported into the US. It is made with hot smoked Pimenton de la Vera and is ready to be sliced and eaten.

TASTING NOTES: You will taste a delicate balance of spices, garlic and smoked paprika. We recommend serving this chorizo with wine and cheese, or with fresh bread. This dry chorizo is also available in a milder version if you prefer more subdued flavors.
